Browning Butter
As we get into a great time of year for desserts, you might be looking for tips and tricks to take your treats to the next level. We have mentioned previously the trick to chocolate chip cookies, aging the dough. Here's another one for you: browning the butter!
Browning butter evaporates water out of the butter, so the flavor gets more concentrated. The butter also starts to carmelize, building a nutty flavor that goes great on anything you traditionally use butter for. Cookies or other desserts get an extra interesting boost from the browned butter, or you can use it to top veggies, or fish or pasta, or of course, toast. Give it a try!
How-to:
1. Cut butter into even pieces to help them melt faster. Add to saucepan (a light color for the saucepan will help if you have one).
2. Melt butter on medium heat. Bring it to a boil.
3. Once butter is boiling, stir constantly, until you see the butter turn brown. There will be foam, this is normal. When you see the butter turn brown, remove from heat.
4. Put the brown butter somewhere to cool, or use it warm.
